At Cyimbili, coffee begins at the shore of Lake Kivu and runs to the top of the highest hill covering an expansive farm across several blocks. We chose this selection to express the full range of flavors and cup structure from across each block representing both traditional and anaerobic fermentations as well as mechanically washed lots. The character of Cyimbili reveals a beam of citrus flavor and stone fruit flavor balanced by black tea tannin.
